    <summary type="html">&lt;div&gt;Have you tried BW3 in Madison, WI?  They're wings are so awesome!  I think they're a chain, but I haven't been to any other except for the one in Madison.  I can't eat their hottest wings though--they make breathing difficult, they're that hot!  I've tried wings all over the country, and I think BW3 is the best I've had so far.&lt;/div&gt;

I would like to know the official story.  I am sort of a wing afficionado among the other things for which I am also an afficianado.  And I have had my fair share of shitty wings and a fair share of decent wings and a fair share of kick ass wings.  I just want to know how the motherland does it.

&lt;br/&gt;Also, in response to another post, some of the best wings I have ever had were in Broomfield, Colorado.  They were done up by a small eatery that specializes in wings.  It is called Wingman.  They are pretty damn good I must say.&lt;/div&gt;

    <title>smoked hot wings</title>

    <summary type="html">&lt;div&gt;Here are directions on how to make smoked hot wings:
&lt;br/&gt;
&lt;br/&gt;1. Marinate the wings at least overnight in your favorite hot sauce (I like to use Frank's Red Hot, but to each there own).
&lt;br/&gt;
&lt;br/&gt;2. Get your smoker up to temperature (I use a vertical water smoker, but you could use a charcoal grill if you make sure you are using indirect heat).
&lt;br/&gt;
&lt;br/&gt;3.  Put the wings in and let them go at about 225 degrees for about 2 hours (don't forget to put your wood on the coals before closing the smoker...I use mesquite, but you might want to try different hardwoods and see what you like the best).  Do not open the smoker/grill during this time or you will lose too much heat.
&lt;br/&gt;
&lt;br/&gt;4.  Boil down the marinade and add whatever ingrediants you like to make a good mopping sauce.  I like to add a touch of honey, a spash of Lea &amp;amp; Perrins, some butter and a little garlic powder.
&lt;br/&gt;
&lt;br/&gt;5.  Open the smoker, stoke the coals, mop the wings (and turn them) and add a couple more chunks of wood.  Close it back up and get the temp back to 225.
&lt;br/&gt;
&lt;br/&gt;6.  After about another hour and a half to two hours check the wings to see if they are done (best to use an instant read meat thermometer, they are cheap and it is better to be safe then sorry).
&lt;br/&gt;
&lt;br/&gt;7.  Enjoy the wings, and remember to make even more the next time since this batch will dissapear with all the people in the neighborhood stopping over to see what smells so good.
&lt;br/&gt;
&lt;br/&gt;
&lt;br/&gt;The best part about these wings is that the hot sauce flavor really penetrates into the meat, so you get that good flavor throughout the wings, not just on the outside.&lt;/div&gt;

    <summary type="html">&lt;div&gt;ok, if anyone is down for a wings party in the Bay Area, Calif.  Lets throw some ideas around in order to devise a plan/possibilities.
&lt;br/&gt;
&lt;br/&gt;Location: 
&lt;br/&gt;Someone's home?
&lt;br/&gt;Local Bar?
&lt;br/&gt;
&lt;br/&gt;I would think a bar would be the chosen atmosphere even though someone's house would be cozy but space would be a key factor.
&lt;br/&gt;
&lt;br/&gt;Food:
&lt;br/&gt;well that's easy wings.  We could order some from back east and than have people cook bring there favorite recipes.  The cook off idea was good as well, but than we would have to hace access to fryers'/oven.  Regardless we will have to warm up what gets shipped.
&lt;br/&gt;
&lt;br/&gt;So, the ultimate place would be a bar that has set-up to cook food.  
&lt;br/&gt;
&lt;br/&gt;Any one have a local hang-out that would allow for this?   I have a place in Cupertino Britannia Arms but may be to far away?

&lt;br/&gt;"City of Angels" Hot Wings of Desire 
&lt;br/&gt;What would you give for true love? Now, what would you give for some really good chicken wings? Not as much? Okay, just checking.	
&lt;br/&gt;
&lt;br/&gt;For the hot pepper sauce:
&lt;br/&gt;
&lt;br/&gt;*	1 pound fresh hot red peppers, roughly chopped 
&lt;br/&gt;*	3 cloves garlic, peeled and crushed 
&lt;br/&gt;*	2 cups distilled white vinegar 
&lt;br/&gt;*	2 cups water 
&lt;br/&gt;*	2 1/2 teaspoons salt 
&lt;br/&gt;
&lt;br/&gt;For the dressing:
&lt;br/&gt;
&lt;br/&gt;*	3 tablespoons finely chopped yellow onion 
&lt;br/&gt;*	1/2 cup peeled and seeded cucumber 
&lt;br/&gt;*	2 tablespoons minced fresh cilantro 
&lt;br/&gt;*	1/2 teaspoon salt 
&lt;br/&gt;*	1/2 teaspoon sugar 
&lt;br/&gt;*	1/4 cup buttermilk 
&lt;br/&gt;*	1 cup sour cream 
&lt;br/&gt;
&lt;br/&gt;For the wings:
&lt;br/&gt;
&lt;br/&gt;*	4 lbs. chicken wings 
&lt;br/&gt;*	peanut or vegetable oil for frying 
&lt;br/&gt;*	1/2 stick butter 
&lt;br/&gt;*	1/2 cup hot pepper sauce 
&lt;br/&gt;*	1 tablespoon white vinegar 
&lt;br/&gt;*	1/4 teaspoon each: celery seed, chile powder, garlic salt, black pepper, and ground coriander 
&lt;br/&gt;*	1 copy Wim Wenders Cooks Wings on a Whim 
&lt;br/&gt;
&lt;br/&gt;Directions:
&lt;br/&gt;1. Combine peppers, garlic, vinegar, water, and salt in a medium saucepan over medium-high heat. Bring the mixture to a boil, reduce heat to low and simmer for 20 minutes. 
&lt;br/&gt;
&lt;br/&gt;2. Remove pepper mixture from heat and blend in 2-3 batches until smooth, then strain into a clean glass jar and set aside to cool. Cover and refrigerate until use 
&lt;br/&gt;
&lt;br/&gt;3. Combine all dressing ingredients in a blender. Blend well and transfer to a mixing bowl; cover and refrigerate. 
&lt;br/&gt;
&lt;br/&gt;4. In a small saucepan over medium heat, combine the butter, hot pepper sauce, white vinegar, celery seed, chile powder, garlic salt, black pepper, and coriander. 
&lt;br/&gt;
&lt;br/&gt;5. Trim and discard the wing tips then cut in two at the joint if desired. Pat dry with paper towels. Heat the oil in a fryer or large Dutch oven to 375°F-400°F and cook the wings for 10-15 minutes in three or four batches. Preheat the oven to 375°F. 
&lt;br/&gt;
&lt;br/&gt;6. Drain wings well, transfer to a large mixing bowl and toss with the pepper-butter sauce. Arrange on sheet pans and bake for 15 minutes in the preheated oven. Serve hot with dressing. 
&lt;br/&gt;
&lt;br/&gt;7. After dinner, pile the dirty dishes in the sink and wait for a kitchen angel to appear. 
&lt;br/&gt;
&lt;br/&gt;Serves 4 &lt;/div&gt;
