    As I previously posted on the SF Restaurants tribe under the Buffalo Wings thread:

    Buffalo wings should be deep fried three times longer than most other deep fried foods to get a seriously crunchy outside, and a moderately chewy meat texture inside, without too much juiciness left to dilute what should be a thoroughly spicy and vinegary sauce that is tossed on just before serving, so the outside doesn't get too soggy.
