if you love garlic, you will love this recipe...quite yummy and does a good job of cleaning out your system the day after, if you know what i mean. i got this recipe from one of the gilroy garlic cookbooks and modified it a bit.
Garlicky Wings
Ingredients:
3 lbs of chicken wings or wingettes
4 heads of garlic
1 1/2 cups olive oil
30 drops of Tabasco
1/2 cup of grated Parmesan cheese
1 1/2 cup of fine bread crumbs
1 teaspoon black pepper
1. Preheat oven to 375 degrees.
2. Rinse 3 lbs. chicken wings or wingettes (you can buy the wings and cut them apart or just buy them already cut up).
3. Separate and peel the cloves of 4 heads of garlic. Put the cloves, 1 and 1/2 cups of olive oil, and about 30 drops of Tabasco in a blender or food processor and puree.
4. Combine 1/2 cup of parmesan cheese, 1 and 1/2 cups of fine bread crumbs (aka Italian style), and 1 teaspoon of pepper in a large bowl.
5. Dip wings in garlic puree and roll in bread crumb mixture one at a time, coating thoroughly.
6. Coat a baking pan with oil and add the wings in a single layer. Drizzle the remaining garlic puree and spring with remaining bread crumbs.
7. Bake for 45 to 60 minutes until brown and crisp.
Makes 9 servings.
